Brownies

1 cup raw cashews
1/2 cup honey
1 tablespoon Pero or other coffee substitute
1 teaspoon vanilla
1 teaspoon lemon juice (fresh)
1 tablespoon Ener-G foods baking powder
1/2 cup chopped walnuts
1/2 cup water 
1/3 cup roasted carob powder
1/2 teaspoon salt
2 teaspoons egg replacer
1 1/2 cups whole wheat flour
1 cup soy milk 
 
Place cashews and water in blender and blend until smooth.  Add honey, carob, Pero, salt, vanilla, milk, egg replacer and lemon juice juice and blend again.  In a large mixing bowl combine flour, baking powder, and walnuts and mix together.  Stir blended mixture into flour mix and mix well.  Pour batter into a lightly sprayed 8x8 cake pan.  Bake at 350 for 35-40 minutes.  You may want to put carob chips on top.
