Cashew Mayonnaise

Cashew Mayonnaise
 
Mix together in a small pan:
      2 cups cold water
      5 tablespoons cornstarch
 
Stir while bringing to a boil.  Boil 1 minute.
 
In the blender add:
      1 cup water (hot is best)
      1 cup cashews
      1/3 cup rolled oats
 
Blend until very smooth.  Then add the cornstarch mix and blend.
Next add:
      1/2 cup fresh lemon juice
      2 teaspoons garlic powder
      2 teaspoons salt
 
Blend again.  Pour into container and refrigerate several hours or until ready to use.
This will keep 5 days.
 
Options:
 
1. You may like to add 1/4 cup sunflower seeds and reduce the cashews to 3/4 cup. 
2.  1 teaspoon onion powder can be added or for those who can't use garlic use all onion powder.
3.  Rolled oats do not need to be added.  They cut the calories.
