Why do nutriionist advocate that eating a snack is good? Or, many small meals? How can we explain that 2 or 3 meals is better even for people with eating disorders....?

Eating many times a day is suppose to keep the blood sugar up and the energy. Eating whole plant foods has lots of fiber and therefore blood sugars and energy stay up. Eating 2 or 3 times a day gives your digestive organs time to rest which is important to your health.
